  • 15 ha of surface under vine
  • Predominantly clay-limestone soils
  • Double Guyot pruning
  • Organic farming since 2009
  • De-budding, de-leafing and thinning (”green harvests”)
  • Grapes harvested October 4th, 2012
  • Mechanical harvesting followed by manual sorting on a sorting table.

Vinification :

  • Traditional method with temperature controlled vats
  • Cross-flow filtration
  • 28 day maceration period in temperature controlled vats
  • Ageing:
    • 71% of production volume aged for 12 months in French oak barrels
    • 29% in vats
  • No fining in the blending process
  • Bottled on May 26th, 27th and 28th, 2014
